A moody, stormy, winter day at Saguaro Lake in the desert of the Tonto National Forest in Arizona.
The southern cattails seen in the foreground are not only a beautiful addition to floral arrangements, but are also edible and useful in many different ways. The pollen from the male flowers is high in protein and can be used in combination with flour to prepare things like pancakes and muffins. While the female flowers are still green they can be picked and cooked like a corn on the cob or pickled for later use. The young roots and shoots are more tender and can be cooked like Asparagus. The young leaves can also be used in salads. The jelly found between the young leaves has antiseptic properties and can be used to treat insect bites and wounds. The fluff from the seeds can be useful as a fire starter or insulation in survival situations and the reeds when burned may act as an insect repellent.
